One of my very favorite recipes. Rice Pudding.

Recipe Introduction
This is the best rice pudding I’ve ever had. Also, the richest!
Ingredients
- 1/2 gallon milk
- 1/4 pound butter
- 3/4 cup sugar
- Bring above to a slow boil.
Add:
- 1 cup rice
- Lower flame to simmer and cook 45 minutes-stir often.
- 1 egg
- 1/2 pint heavy cream
- 1 teaspoon vanilla
- 1 1/2 ounces Amaretto (optional}
- cinnamon
Recipe
Beat together the egg, cream, vanilla and Amaretto and add to the cooked rice. Mix thoroughly. Put in a serving dish and let cool. Sprinkle with cinnamon. Refrigerate.
Serves 5-8
I usually use a short or medium grain rice to make this. Have found that regular rice, like Uncle Bens, doesn’t absorb the liquid as well and it comes out too watery.
I’ve used Aborio rice or Goya brand medium grain rice.
